Retronasal Aroma of Aromatic Components in Jelly Drinks
Purpose
Retronasal aroma measurement of the aromatic components contained in jelly drinks was conducted using a time-of-flight mass spectrometer as a detector.

Measurement Method | The aromatic components passing through the nasal cavity were introduced into the mass spectrometer via a tube after swallowing the jelly drinks. |
Data Processing | Aromatic components were extracted from the mass spectrum using Retronasal Plus and Data Analysis software. |
Results
Using the marker search software Retronasal Plus, the TIC and the mass spectra of the aromatic components extracted from the jelly drinks are shown (Fig. 1, 2).
Additionally, the EIC of the m/z values presumed to originate from the aromatic components is shown in Fig. 3. In all cases, it was observed that the intensity gradually decreased after swallowing.
